December 14th is National Bouillabaisse Day. Bouillabaisse is a traditional Provencal fish stew originating from the port city of Marseille. Bouillabaisse is a fish soup containing various kinds of cooked fish, shellfish, and vegetables, flavored with a variety of herbs and spices. On a recent episode of Martha Stewart Living, I watched as she and another man prepared Bouillabaisse. The traditional way of preparing Bouillabaisse consisted of grinding the fish bones and even parts of the shellfish, stating that is where all the great flavor comes from. It was very time consuming and tedious work to create this stew.
Bouillabaisse is often served with bread and rouile and the seafood and vegetables separated from the stew and served in a separate bowl or on a plate, other locations will serve it together.
